ABSTRACT

This in-depth study explores the complex influence of the physicochemical characteristics of the Malti beverage, a low-alcohol drink, on the consumption decision of individuals who abstain from alcohol, whether they are absolute or relative non-drinkers, in the socio-culturally charged context of Lubumbashi, Democratic Republic of the Congo. The main objective was to determine the correlation between the sensory attributes of the product, such as foam and color, and the propensity to consume, while analyzing the underlying psychological mechanisms, notably cognitive dissonance. A mixed methodology, combining a survey (questionnaires and structured individual interviews) with 278 participants (120 absolute and 158 relative) and physico-chemical analyses in the laboratory of the Agro-Food Center (CRAA), was employed. The results are striking: the entire sample interviewed consumes Malti. More significantly, 64% of participants recognize that sensory characteristics such as foam and color positively influence the decision to consume this product. This behavior is maintained despite divergent perceptions and persistent skepticism regarding the total absence of alcohol in the beverage, especially among absolute non-consumers. The study validates the hypothesis of a positive and significant influence of sensory attributes and highlights the role of Malti as an acceptable social substitute for beer. It shows that consumption by non-absolute consumers is a clear indicator of cognitive dissonance, resolved through rationalization strategies that allow reconciling a strict religious belief (prohibition of alcohol consumption) with socially valued behavior (participation in consumption rituals). This research contributes to a better understanding of consumption dynamics in environments where cultural and religious norms exert strong pressure on individual choices.
